Lentil Rice Pilaf

This pilaf is one of my go-to stovetop recipes - delicious, inexpensive, and filling. Add steamed zucchini (tossed with olive oil, salt & pepper) and a simple yogurt sauce, and you've got a well-rounded meal that's healthy and satisfying.
